Pomegranate Blueberry Salad

This salad is one of my favorite things to eat for breakfast or as a morning snack, especially when it’s berry season! This particular recipe comes from the book, Ani’s 15-Day Fat Blast by Ani Phyo.

I typically make it just like the recipe says, but this time, I used strawberries in place of the pomegranate seeds. The beauty of this recipe is that you can use any combination of your favorite berries. Since I love coconut, I added a teaspoon of unsweetened shredded coconut to the mix and the raw cacao nibs sprinkled on top give it a little crunch. Delicious!

Pomegranate Blueberry Salad

Ingredients:

1 1/2 cup blueberries

1/2 cup pomegranate seeds

2 teaspoons flax meal

1/4 teaspoon cinnamon

1 tablespoon cacao nibs
